Fish and Seafood can be quite an acquired taste, but when cooked correctly it can convert the doubters without hesitation.

England is a country surrounded by water, meaning that fish and seafood should be abundantly popular. However it’s surprising just how many people are put off by the thought of eating slimy squid or thinking that salmon is bland and tasteless. The key in conquering this undeserved bland-tasting tag, is in how it’s cooked.

There are many different types of seafood and fish, to name but a few –

  • Scallops
  • Prawns
  • Lobster
  • Cod
  • Squid (or Calamari)
  • Salmon

Freshly Caught Salmon

Salmon can be very expensive if bought fresh, but when done in the right way can be a delicious feast. Take a whole side of Salmon and score in several places, making the scores about half an inch deep. Stuff each score in the salmon with fresh dill, sprinkle liberally with ground black pepper and squeeze with fresh lemon. Bake in the oven for about 15 minutes on 150®C , wrapped in tin foil. (Baste salmon with juices after about 5 minutes.)

Nice Firm Scallops

The best way to cook this type of seafood is to fry in a really hot pan for between 30-60 seconds in a generous helping of garlic butter. Be careful not to overcook the scallops as they will have a very rubbery texture. This is a simple dish which is very easy to prepare. Serve the scallops with a nice rocket salad.

Lobster is the King of Seafood

The lobster isn’t the type of fish for people who don't like getting in a mess. However, when hacking through the shell of a boiled lobster a very strong and fleshy meat is present. Lobster meat is very similar in texture to monkfish and is very substantial. As with scallops, it is again delicious served with melted garlic butter.

Delicious Deep Fried Cod

A lot of people like the feeling of tradition and Cod and Chips for most people, is no exception to this. Deep fried in a delicious beer batter and to give an added kick, a pinch of paprika gives it a lovely colour. Serve with thick cut chunky chips. If converting anybody to seafood proves tiresome, then deep fried cod is something to always fall back on.

Squid (or Calamari) is Seafood with a Robust Bite

Another type of seafood that if cooked for too long can be rubbery like scallops. This has a firm bite and a very, slightly chewy texture. A nice touch with Squid is to deep fry in batter to make a beautifully tasting Calamari. Squid Ink is also a delicacy that can be used as a garnish.

Prawns are Lovely with Chilli

The biggest fattest prawns taste delicious when fried for 2-3 minutes, using a squeeze of lemon or lime. Again, garlic and a sprinkling of chilli flakes can be used towards the end of cooking. Prawns are a firm favourite when served up in a stir fry with soy sauce and five spice flavoured noodles and vegetables. (Red pepper and baby corn is a firm favourite).

Beyond the choices of seafood and fish that are described here, there are many more choices and our seas are abundant with produce. Alternatives to cod are now being encouraged due to shortages such as pollock which can make a wonderful replacement for deep fried cod.
